Cream of Broccoli Soup (Vegetarian) Ingredients: 1 c cashews, rough chopped 2 c broccoli, floretes & tender stems. 6 cloves of garlic (large), minced. 1 T butter 3 c vegetable stock, divided. 1 lemon, zested and juiced 1 1/2 c kale, torn. 1/2 tsp salt, 1/4 tsp white pepper

The Ahaa retreats feature a yummy vegetarian cuisine made by retreat hosts. The day started with grounding into Mother Earth with feet and breath. Retreating gives one the space to contemplate joyful moments each day that we often miss in a busy scheduled life. Breath is an exchange of particles with everything the environment. Directions: Cover cashews with boiling water. Place butter and garlic in a large skillet, sauté 4 minutes. Add broccoli, drained cashews, 2 c stock. Simmer 10 min. Cool for 10 minutes. Place 1/2 of the contents of skillet into a blender. Add 1/2 c stock, 1/2 of the lemon juice, zest and kale. Blend for 3 minutes on med high. Repeat Add salt & pepper Warm in saucepan, present in deep bowls. .. Serves 4-6
